Shahi Patta Gobhi Dum Aloo step by step

  1. Wash Patta Gobhi properly, then chop it in slices like strips..
  2. Now wash sliced Patta Gobhi properly..
  3. Chop Aloo in medium-small size pieces..
  4. Chop Onions, Green Chillies, Ginger & Dhaniya Leaves very finely..
  5. Grind Tomatoes finely into purée in a mixer grinder..
  6. Soak Kaju pieces in boiling water for 5-10 minutes & then grind them finely into paste..

  8. Now take a kadhai, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first..
  9. When smoke starts coming out of Kadhai, turn off the flame & let the oil cool down a bit..
  10. After some time, again turn on the gas & keep the gas on medium flame..
  11. Then add sliced Patta Gobhi in it & cook them for 5-7 minutes..
  12. Meanwhile on the other hand, take another kadhai or pan, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame..
  13. When smoke starts coming out of pan or Kadhai, turn off the flame & let them cool down a bit..
  14. After some time, again turn on the gas & keep it on medium-low flame..
  15. Now add 1 Teaspoon Jeera, 1/2 Teaspoon Ajwain, 1Tea Spoon Jeera & 1 Pinch Hing in it & let them sizzle..

  17. When they start sizzling, add finely chopped Onions, Green Chillies & Ginger in it & roast them till they turn into golden brown in colour..

  19. After 3-4 minutes, when they turn into golden brown in colour, add 1/2 Teaspoon Haldi Powder in it & roast it for 1 Minute..
  20. After 1 minute, add finely grinded Kaju paste in it & roast them for 1-2 minutes..
  21. After 1-2 minutes, add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly..
  22. After 5-6 minutes, when oil is completely released, add 1/2 Teaspoon Laal Mirch Powder, 2 Teaspoon Dhaniya Powder in it & roast them for 2-3 minutes..

  24. Now after 5-7 minutes, when Patta Gobhi is turned golden brown in colour & crispy, turn off the flame & transfer them in Masala mixture pan & mix them properly..
  25. Then add chopped aloo pieces in it & mix them properly,.
  26. Now cook them for 5-10 minutes on low flame..
  27. After 5-10 minutes, add some water, finely chopped dhaniya leaves & 1/2 Teaspoon Garam Masala in it & mix them properly..
