Dahi Wale Aloo. Dahi Wale Aloo Recipe is a common Punjabi dish also cooked in the rest of Northern India. A comforting Navratri dish it is made of boiled potato chunks cooked in a thick creamy yogurt curry which is cooling and perfect for fasting days. Dahi aloo is a rich and creamy gravy delicacy from Rajasthan.
We have added besan in the curd mixture which will help in not letting the curd curdle. Making Dahi Wale Aloo (Regular): Take yogurt, besan, turmeric powder, red chili powder and salt in a bowl. Ingredients of Dahi Wale Aloo
- Prepare 4 of Potatoes.
- It's 2-3 of Onions.
- Prepare 3 of Green Chillies.
- It's 1 inch of Ginger.
- It's 1 tbsp of Mustard Oil.
- It's 1 Pinch of Hing.
- It's 1 Tea Spoon of Jeera.
- It's 1/2 Tea Spoon of Coriander Seeds.
- You need 1/2 Tea Spoon of Saunf.
- You need 1 Cup of Dahi.
- You need of Spices.
- It's 2 Tea Spoon of Salt.
- Prepare 1/2 Tea Spoon of Haldi Powder.
- You need 1 Tea Spoon of Kashmiri Laal Mirch Powder.
- It's 1/2 Tea Spoon of Anardana Powder or 1/2 Teaspoon Amchoor Powder.
- Prepare 1/2 Tea Spoon of Laal Mirch Powder.
- It's 1 Table Spoon of Dhaniya Powder.
- Prepare 1/2 Tea Spoon of Garam Masala.
- Prepare 1 Tea Spoon of Roasted Kasuri Methi.
Dahi Wale Aloo is a very popular curry from Northern India that tastes absolute delish with paranthas, puris and rice. In Banaras, it is also popularly known as 'Aloo Ka Rasa'. Dahi Wale Aloo instructions
- Wash Aloo properly & then chop them in medium-small size pieces..
- .
- But don’t peel off their skin..
- Now take a bowl, add chopped aloo pieces in it with 1 Teaspoon Salt & mix them properly..
- No add water in it & let them rest for 5-10 minutes so that their starch is completely released..
- Chop Onions, Ginger & Green Chillies very Finely..

- Now add all spices in 1 Cup Dahi & mix them properly..

- Now take a kadhai, add oil in it for frying & keep the gas on medium flame..
- Now after 5-10 minutes, drain out all the water from aloo..
- When oil gets heated up, add chopped aloo pieces in it & fry them till they turn into golden brown in colour..
- Meanwhile, take another kadhai, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first..
- When smoke starts coming out of Kadhai, turn off the flame & let the oil cool down a bit..
- After some time, again turn on the gas & keep it on medium flame..
- Now add 1 Teaspoon Jeera, 1/2 Teaspoon Coriander Seeds, 1/2 Teaspoon Saunf & 1 Pinch Hing in it & let them sizzle..

- When they start sizzling, add finely chopped Onions, Ginger & Green Chillies in it & roast them till they turn into golden brown in colour..
- Now after 7-8 minutes, when aloo pieces turn into golden brown in colour, turn off the flame & take them out in a plate or a bowl..
- Now after 5-6 minutes, when onions turn into golden brown in colour, add spices mixed dahi in it & mix them properly..

- Keep stirring it so that it doesn’t get burned & cook them till they start releasing oil..
- After 6-7 minutes, when oil is completely released, add fried aloo pieces in it with 1 Teaspoon Roasted Kasuri Methi & 1/2 Teaspoon Garam Masala & some water & mix them properly..

- Your Dahi Wale Aloo are ready to be served..
Add asafoetida then add green chillies, mustard seeds, and saute it. Add turmeric powder then diced boiled potato. Dahi wale aloo is a very simple, yet delicious potato delicacy in yogurt curry. I remember when I was a kid, we used to eat dahi wale aloo with plain paratha in dinner meals. I have inherited this dish from my grandmother, mother and my aunts.
