  1. Prepare of Poha(thick).
  2. Prepare of Green chilles.
  3. You need of medium potatoes chopped.
  4. It's of big capsicum chopped.
  5. Prepare of tomatoe chopped.
  6. Prepare of lemon wedge.
  7. Prepare of jeera.
  8. It's of Ginger.
  9. Prepare of curry leaves.
  10. You need of Black pepper.
  11. It's of Red chilli powder.

I replaced the white rice poha with red rice poha. Red rice poha is better in nutrition and is unpolished. Poha or powa is very popular Indian breakfast or evening snack. Vegetable poha is easy and quick to make.

Vegetables Poha instructions

  1. Heat a pan add 4 tbsp oil..
  2. Add jeera, green chillies, Ginger,curry leaves saute for 1-2 minutes.
  3. Add diced potatoes saute 2 min..
  4. Add, capsicum and matar and cook till soften the veggies.
  5. Add salt,red chilli powder,haldi powder saute 1 min.
  6. Soak poha in water for 2 min..
  7. Strain poha and set gas on low flame..and add poha...in to pan.
  8. Cover pan with a lid...and turn off gas..
  9. After 2 min remove lid..
  10. Garnish with tomato,green chillies,and lemon wedges.

Flattened Rice is mixed with vegetables, onion and seasoned with green chilies and cumin seeds. Serve vegetable poha with hot cup of tea and sev bhujia. Heat oil or ghee in a pan, add mustard, urad dal, asafoetida and let them sizzle. Add in onions, green chillies, ginger and saute for a min. Add in veggies, salt, and turmeric and mix well.
