- Prepare of Ingredients for making curry :-.
- You need 1 cup of ripe mango pulp.
- You need 1 cup of curd/dahi.
- Prepare 2 cups of water.
- Prepare 3 tbsp of Chickpea flour/besan.
- You need 1 -2 tsp of Jaggery/sugar (optional).
- You need 1/2 tsp of Red chilli powder.
- You need 1/4 tsp of Turmeric/haldi.
- Prepare to taste of Salt.

- It's 1 tbsp of Ghee.
- You need 1 tsp of Cumin seeds.
- Prepare 1 tsp of Mustard seeds.
- Prepare 1 inches of Cinnamon stick/dalchini.
- It's 1-2 of Dry red chilli.
- Prepare 1-2 of Green chilli (optional).
- You need 7-8 of Curry leaves.
- It's 1/8 tsp (a pinch) of Asafoetida.
- Prepare 3 tbsp of Chopped coriander leaves.

- Steps for preparing curry:-.
- In a big bowl, add 1 cup curd and chickpea flour,with the help of whisk mix well..
- Now add 1cup mango puree to the bowl and mix everything well,make sure there is no lumps in the batter..
- Add 2 cups of water,1/2 tsp chilli powder,1/4 tsp turmeric and salt to taste.(Am not using jaggery as my mango pulp is enough sweet to balance the sour taste of curd.If your mango pulp is not sweet enough or you like your curry to be more sweet feel free to add jaggery/sugar as per your taste).
- Whisk the mixture well,pour in a deep pan and turn on the gas to medium heat..
- Bring the mixture to boil,stir occasionally..
- When mixture starts boiling lower the heat and simmer for 8-10 minutes..
- Whisk mixture occasionally while simmering,to get smooth and lump free curry..
- While curry is simmering let's prepare tempering..
- Heat a small pan over medium heat,add 1tbsp of ghee to hot pan..
- Add 1tsp cumin seeds,1 tsp mustard seeds and 1/8 tsp hing..
- When cumin and mustard seeds starts spluttering add 7-8 curry leaves,1" cinnamon stick,2 dry red chillies,2 green chillies and stir for few seconds..
- Pour the tempering over simmering fajeto curry..
- Turn of the heat and garnished with 1-2 tbsp chopped coriander leaves..
- Serve fajeto curry with steamed rice..
