It is a very popular snack from Gujarati cuisine. Dhokla is a vegetarian culinary dish that is found mainly in the Indian state of Gujarat and parts of adjacent states. It is made with a fermented batter derived from rice and split urad dal. You can have Gujarati Dhokla using 18 ingredients and 15 steps. Here is how you achieve it.

Dhokla can be eaten for breakfast, as a main course, as a side dish, or as a snack. Besan dhokla is a Gujarati snack. Being steamed besan dhokla is healthy and nutritious. It is a thick fermented gram flour and yogurt batter steamed till it is like a soft fluffy pillow.
Gujarati Dhokla step by step
- For Dhokla:.
- Firstly, in a large mixing bowl add 2 cups Besan and 3/4th cup semolina, mix well add water bit by bit to make a thick and smooth dhokla batter. Whisk well to ensure there are no lumps in the batter. Rest this batter for 2-3 hours..
- Meanwhile, in a pressure cooker add water and cooker stand, remove pressure cooker whistle. Cover with lid and pre-heat the cooker for 5-6 minutes..
- After 2-3 hours add salt and eno fruit salt (use basic blue puch eno not any flavor eno). Give it a good mix. Dhokla batter is ready..
- Now grease a falt bottom vessel with oil and pour Dhokla batter into it. Tap the vessel for removing air bubbles..
- Place the vessel in pre-heated pressure cooker and steam the dhokla for 15 mins on high to medium flame..
- After 15 mins check with the help of knife whether Dhoklas are done or not. If the batter is not sticking to knife the Dhokla is cooked. Remove it from the pressure cooker and let it cool down completely..
- After cooling de-mould the Dhokla from the vessel in a plate and cut pieces. Now prepare tadka..
- For Tadka:.
- Heat oil in a kadai, add mustard seeds and let it splutter, now add asafoetida, curry leaves, slit green chillies, mix well and add half a glass of water, now add sugar and salt, mix well and let the tadka boil for 3-4 mins..
- Now pour this tadka over dhokla and let the dhokla absorb the water completely..
- Now garnish the dhokla by sprinkling, grated coconut, khaman sev and coriander leaves..
- Serve hot with Mix Chutney combination of - tamarind chutney and Pudina dhaniya chutney.
