  4. Prepare 1/2 teaspoon of dry pomegranate powder or 1 teaspoon Amchur powder/Dry mango powder.

  6. Prepare 1/4 teaspoon of Garam masala powder.
  7. You need 1/2 teaspoon of coriander powder.
  8. Prepare 1/4 teaspoon of cumin powder.
  9. Prepare 3-4 tsp of oil.
  10. It's 3 tbsp of finely chopped onion.
  11. It's 1/2 teaspoon of ginger garlic paste.
  12. Prepare 1/8 teaspoon of Hing/Asafoetida.
  13. You need 1 teaspoon of Cumin seeds.
  14. You need 1 teaspoon of Fennel seeds.
  15. Prepare 2 tbsp of chopped coriander leaves.

The original recipe calls for frying the okra. to cut down on the fat, I have sauteed the okra. Wipe dry & chop off the tops & ends. Add oil & let it get hot. Reduce ga to medium now and add the kalonji.

  1. Clean and pat dry Bhindi/Ladies finger..
  2. You can chop them or slice them in halves as desired.
  3. In a bowl, add turmeric, chilli powder, coriander powder, cumin powder, aamchur and salt. Generally salt is added at the end of cooking Bhindi, you can add this at beginning for this recipe. In case you are not comfortable doing it, then add it towards the end while cooking the dish. Mix all the spices well.
  4. Add sliced bhindi to the bowl and mix well. Bhindi should be coated well with the spices and rest it on the counter for 15 minutes..
  5. In a kadai/pan, heat oil, add cumin seeds, fennel seeds and hing.
  6. Allow cumin seeds to splutter and fennel seeds to turn golden brown.
  7. Add onion and ginger garlic paste. Saute for 2 mins.
  8. Add besan.
  9. Saute over low flame for 5 minutes or till the besan turns aromat..
  10. Add in prepared bhindi masala mix.
  11. Saute Bhindi for 1-2 minutes.
  12. Cover and simmer for 10 minutes or till bhindi gets cooked completely..
