- Prepare 300 gm of Ching's Egg Noodles.
- Prepare 1 of Red Onion finely chopped.
- Prepare 3 of Garlic cloves finely chopped.
- You need 1 tbsp of Chilli Garlic sauce.
- You need 1 tbsp of Soy Sauce.
- It's 1 tsp of Black Pepper Powder.
- You need 1 tbsp of Lemon juice.
- Prepare 1 cup of thinly sliced Capsicums.
- Prepare 1 bunch of Spring Onions finely chopped.
- You need 1 cup of Cabbage shredded.
- It's 1 bunch of Coriander Leaves finely chopped.
- You need 2-3 tbsp of Oil.
There are a lot of brands selling hakka noodles. Veg hakka noodles is an Indo-Chinese preparation that is made by tossing boiled noodles and stir fried vegetables in Chinese sauces. - In a Kadai, heat Oil at first. Saute finely chopped Garlic. Add finely chopped Spring Onion Greens, Red Onion, shredded Cabbage and thinly sliced Capsicums. Add Soy and Chilli Garlic sauces both. Also add a little of Black Pepper too. Saute all of these for about 5-8 minutes. That's it. Do not exceed the time. The Veggies should retain their crunch. The raw smell should fade away..
- Meanwhile boil Noodles with a teaspoon of Oil and Salt. Drain and rinse with cold water. Keep aside..
- After the Veggies are done, add these boiled noodles to the sauteed vegetables and sprinkle some more Black Pepper powder on it. Squeeze some Lemon juice and garnish with chopped Coriander. Serve hot immediately. Enjoy!.

For this recipe, I did not use cabbage because first I didn't have it the day I made these noodles and second, I don't like cabbage that much in my noodles. So, stick to the traditional veggies.
