Ingredients of Gujarati khandvi
- Prepare 1 cup of gram flour.
- You need 1 cup of sour curd.
- You need 1 cup of water.
- You need 1/4 teaspoon of turmeric powder.

Gujarati khandvi step by step
- Take gram flour+curd+water+turmeric powder +salt+oil+green chillies +genger paste in a large bowl.mix properly and make a smooth batter using a hand blander..
- Pour batter into a heavy bottomed pan or a kadai and cook on low flame..
- Keep stirring constantly to avoid lump formation..
- Cook until mixture become thick and does not taste row.it will take approx8/10 minutes.(time may depending on the thickness of pan and quantity of batter).
- Transfer a large spoonful of batter over previously greased plate or thali.spread batter in a thin layer with the backside of a flat spoon or a spatula.depending on the quantity of the batter and size of a plate.about 2/3plate to spread the whole batter..
- Let it cool for 5/6 minutes.once cooled place straight cut using a knife and make 2" wide strip..
- Put some chopped coriander leaves and shredded coconut sprinkle all over cut strip..
- Carefully roll each strip in to a roll (like swiss roll) and transfer them to a serving dish..
- FOR SEASONING... heat3tablespoon oil in a small tempering pan.add mustard seeds,when they begin to crackle,add cumin seeds,curry leaves and green chillies and let them cook for around 30/40seconds.Add sesame seeds only in the end when the soute is ready..
- Pour prepared seasoning over khandavi roll..
- Sprinkle shredded coconut and chopped coriander leaves.serve it with a spoonful of green coriander chutney..
