- To begin making the koftas; first combine all the ingredients for the koftas in a bowl, knead well and divide them into lemon size balls..
- Deep fry these koftas in hot oil until golden brown in color, take them out in a plate and keep aside.
- Blanch the spinach leaves and make a purée, keep aside.
- Grind onion, tomatoes, green chillies, ginger and cardamom to make a smooth purée..
- Heat oil in a pan add bay leaves, now Stir in the onion tomato purée, cream, turmeric powder, shahi paneer masala, garam masala powder, salt, kasuri methi and chilli powder to taste..
- Bring the mixture to a boil and simmer for a couple of minutes till everything get cooked through, keep stirring in between.
- Add the spinach purée and stir well. Add the koftas, cover the pan and simmer until the curry and flavours get absorbed into the koftas..
- Adjust the consistency of the koftas by adding water if required..
