Ingredients of Rava Aloo kachori

  10. Prepare 1/2 tsp of aamchur / dry mango powder.
  11. You need pinch of hing / asafoetida.
  12. Prepare 2 of potato / aloo, boiled & mashed.
  13. You need 1/2 tsp of salt.
  14. You need 2 tbsp of coriander, finely chopped.
  15. It's 2 cup of water.
  16. You need 1/4 tsp of ajwain / carom seeds.
  17. Prepare 1/4 tsp of salt.

Heat up oil in a pan. Add ginger-garlic-green chili paste and fry for about a minute. To make coating or cover of the kachori First take some samo seeds / vrat ke chawal/ varai in to a mixie pot and grind to make that in to a fine powder. Likewise put sabudana / tapioca in to blender and grind to make it coarse powder.

Rava Aloo kachori step by step

  1. Firstly prepare suji dough by boiling 2 cup water, ¼ tsp ajwain, ¼ tsp salt and 1 tsp oil..
  2. Once the water comes to a boil; add rava slowly, stirring continuously in another hand..
  3. Transfer the cooked rava into a bowl and cool slightly..
  4. Once the rava is warm knead well till the rava dough turns soft and smooth. grease hand with oil and pinch a ball sized dough..
  5. Flatten slightly and pressing from sides form a cup..
  6. Stuff a tbsp of aloo stuffing in centre. get the sides together and pinch to seal..
  7. Press gently and form a ball, flatten slightly..
  8. Fry the rava kachori in hot oil or bake in preheated oven at 180 degree celsius for 20 minutes..
  9. Stir occasionally and fry on medium flame..
  10. Finally, serve rava kachori / suji kachori hot with green chutney..

Boil potatoes, peel them and mash them very well. Adding rava adds extra crunch to kachori but if you don't have, comfortably leave it. Make sure that coriander leaves have no water in them, otherwise potato mix will be soggy and it will make rolling difficult. Also, mix will seep out while rolling and frying.
