How to Prepare Perfect Gujarati Kadhi !!

Gujarati Kadhi !!. To all those who do not know, Kadhi is a yogurt-based gravy dish to which chickpea flour/besan is added, tempered and then simmered with spices. At home we all love kadhi. Heat the oil and ghee together in a small skillet over medium heat; fry the dried red chile peppers, curry leaves, cumin seeds, mustard seed, and asafetida powder in the the mixture until the seeds splutter.

Gujarati Kadhi !! Heat the ghee in a kadhai and add the cumin seeds and mustard seeds. When the seeds crackle, add the asafoetida and sauté for a few seconds. In a medium bowl, mix the gram flour with a tablespoon of water to form a thick paste. You can cook Gujarati Kadhi !! using 13 ingredients and 5 steps. Here is how you achieve it.

Ingredients of Gujarati Kadhi !!

  1. You need 1 cup of Fresh Curd.
  2. It's 3 tbsp of Besan.
  3. Prepare 1 tsp of Ginger Green Chilli Paste.
  4. You need As per taste of Salt.
  5. It's 1/2 cup of Water.
  6. Prepare 1 tbsp of Sugar.
  7. Prepare 1 tbsp of Ghee.
  8. You need 1/2 tsp of Mustard Seeds.
  9. Prepare 1/2 tsp of Cumin Seeds.
  10. It's 1/4 tsp of Methi Seeds.
  11. Prepare Pinch of Hing.
  12. Prepare Few of Curry leaves.
  13. It's Handful of Chopped Fresh Green Coriander Leaves for garnishing.

Stir this paste into the yoghurt mixture. Heat a large saucepan and add the oil, mustard seeds, cumin seeds, cinnamon and cloves. When they start to pop, add the asafoetida, ginger, garlic and curry leaves, followed by the yoghurt mixture, and stir well. Take a bowl and mix the curd, gram four, asafoetida, jaggery, salt and water.

  2. Add salt, ginger green chilli paste, water and sugar. Whisk everything well and keep aside..
  3. Heat up the ghee in a pan on low flame. Add mustard seeds, cumin seeds and methi seeds. Let it splutter..
  4. Add hing and curry leaves and saute for a minute. Add prepared curd mixture, mix well and cook for 4 to 5 mins on low flame..
  5. Switch off the flame. Garnish with fresh green coriander leaves and serve hot with khichdi, rice, roti or puran poli...

Mix it well using a whisk. The Gujarati kadhi has a simple tempering of cinnamon stick, cloves, mustard seeds and cumin seeds. You may also add some methi seeds (fenugreek seeds) if you like. The amount of besan in this recipe can be adjusted to taste. You may reduce if you like your Gujarati kadhi to taste even less of besan and look more white.
