This delicious pickle made out of gooseberries is the perfect accompaniment with dal and roti or rice. Heat half the oil in a kadhai and fry the amla pieces.   1. Rinse the amal well. Dry it completely. Remove the seeds and cut into pieces..

  3. Then add fennel seeds and roast for a minute..
  4. Remove it in a plate. In same pan add mustard seeds and roast for half minute..
  5. Switch off the gas. Remove it from the pan. Keep it aside..
  6. Grind coarsely fenugreek and fennel seeds. Remove from the pot and keep aside..
  7. Then grind coarsely mustard seeds..
  8. Heat the oil in a pan on low medium flame. When the oil is hot add amla pieces and sauté for a minute until they turn soft..
  9. Now switch off the gas. Add asafoetida, mustard powder, salt, red chilli powder, turmeric powder, fenugreek and fennel seed powder..
  10. Mix all ingredients together well. Amla pickle is ready. Let it cool down completely..
  11. Store it in the clean and dry glass jar..
