- Wash the Rice & strain the water & keep it aside.
- Chop all the aforementioned veggies & keep readily available...Keep the Tempering Spices & rest other Masalas ready too.
- Grate the Carrots & Amla & set aside & also, in a large & heavy bottomed pan/wok/pressure pan, etc. Add in the oil & ghee, together over the medium-high flame.
- Add in the Tempering Spices to it, allow it to release its fine aroma & then add in the onions- sauté for 2 mins until translucent & then, add in the rest other chopped & grated veggies to it- one by one, add in the salt too & sauté for about 5 mins time.
- Once well sautéd the veggies- Add into it the washed rice & mix everything well together until all are nicely combined- at this point, add in the dry ground Masalas.
- Now, add in the measured water to it & also check out the salt & sugar & put some more (if at all required), & mix well- Put the cover of the pan, once it starts boiling- until, the Rice & veggies are all well cooked & done.
- Checkout once done, by carefully & gently stirring everything from upside down & turn off the flame & allow it to sit on its standby position for another 10-15 mins time, before serving hot with any raita/achar or sabji of your choice.
