Ingredients of Khatta Meetha Gobhi ka Achar
- Prepare of Cauliflower.
- Prepare of mustard Oil.
- It's of Fenugreek seeds.
- You need of saunf/fennel seeds.
- It's of onion seeds.
- It's of mustard seeds powder.
- It's of shakar/ jaggery.
- It's of slit green chillies (optional).
- It's of salt and red chilli powder.
- It's of turmeric powder.
- It's of Water for blanching.
But I have opted out turnip as I don't like it very much. This is my mom's traditional recipe full of sweet n sour flavors with gur n vinegar. We all love this achar so much that we eat it like any veggie. Drain the water from vegetables and spread them on a dry cloth under the sun for drying.
Khatta Meetha Gobhi ka Achar step by step
- Wash the gobhi thoroughly with water, and cut the gobhi florets. In a pan bring the water to boil and blanch the gobhi.
- Now dry them in sun for one day.
- Now take the whole masalas like Fenugreek seeds, saunf, kalongi, and grind them coarsely in the grinder.
- Add the grinded masalas to the dried gobhi and mix well so that it get nicely coated with the masala. Add the rye and the shakar or gur and mix well. Now add the oil and mix well. You may add 2-3 slit green chillies for more tangy flavour.
- Store in a dried air tight container and keep it in sun fir two three days. The pickle is ready to eat in week's time.
It is better if you make the gajar gobhi shalgam ka khatta meetha achar on a sunny day because then vegetables will dry better. Otherwise, keep it under the fan for drying.
