Ingredients of Boondi and Motichoor Ladoos

  1. You need 1 cup of Gram Flour or Besan.
  2. You need 3/4 cup of Water.

  6. Prepare 1/8 tsp of Food colour.
  7. It's 1 tsp of Cardamom powder.

Make sure there are no lumps. When ready to make the boondis, make a temp slotted bowl by piercing the foil bowl with a safety pin. Heat the Kadai with ghee and oil. Both the ladoos are made using deep-fried gram flour boondi and both are sweetened with sugar syrup, but the main difference is the size of the pearls (boondi) and the texture of the ladoos.

Boondi and Motichoor Ladoos step by step

  1. Prepare the semi thick batter with Gram Flour and water. Make boondis as shown in the pictures by pouring some batter through the sieve into the hot Oil. You need to ensure that the oil is very hot while pouring the batter..
  2. Remove the boondis in a minute or two. (Do not overfry or make them crispier by frying for a longer time).
  3. Take a pan, add sugar along with water and food colour. It should be a one string consistency sugar syrup. After frying, add the chopped nuts and raisins of your choice and pour the hot syrup over it. Once the boondis are cooled and slightly warm, you can start shaping them into Laddus..
  4. Add melon seeds too for that awesome taste. For the motichoor laddus, just give it a pulse once or twice in your blender jar until it looks crumbled up. Make Laddus the same way for this too. Shape them according to your preferable size..

Boondi ladoos are made using bigger size boondi while motichoor ladoos use tiny sized boondi. The name Motichur Ladoo means, Moti - Pearl and Choor - Crumbled / Crushed in Hindi, which makes in sense crumbled pearl-like ladoo.
