Kerala Sambhar instructions

  1. Soak tamarind in warm water for 45 minutes.
  2. Clean toor dal. discard the water.
  3. In pressure cooker, add dal, turmeric and water. pressure cook until done.
  4. Mash dal. keep it aside.
  5. Heat oil in a pan, add dals and fenugreek seeds. saute until brown.
  6. Add coriander seeds, dry red chillies, shallots/onion and curry leaves. mix.
  7. Add coconut and saute until golden brown.
  8. Allow to cool completely.
  9. Pressure cook vegetables for 1 whistle with little water and 1/4 tsp turmeric.
  10. Grind cooled mixture with water to smooth paste.
  11. Add dal, tamarind water, ground paste, tomatoes, salt, bhendi to cooked vegetables.
  12. Bring to boil, simmer and cook for 15-20 minutes.
  13. Heat oil in a small pan. add hing and splutter mustard seeds.
  14. Add dry red chillies and curry leaves. saute for 2-3 seconds..
  15. Add coriander leaves seasoning to sambhar. mix well..
  16. Serve hot with rice/idli/dosas etc.
