- Bhindi preparation—-Heat 2 tbsp oil in a pan add the chopped bhindi. Sauté it to in medium flame for 10 minutes..
- Transfer bhindi into a bowl.Now in the same pan add 2 tbsp oil heat it. Add cumin seeds,green chilli, onions one by one. Fry it until onions turn light brown..
- Then add ginger garlic paste cook it for 1 minute.Add tomatoes and salt,cook it for 1-4 minutes..
- Now add all the dry masala(spices)saute it well..
- Now add the fried bhindi, mix & cook it for 2-3 minutes on medium flame. Add lemon juice,coriander leavesand turn off the flame..
- Masala bhindi is ready.Serve with roti/ chawal/paratha..

- In a bowl whisk the curd.Add all the ingredients..
- Mix well,garnish with coriander leaves and serve..
This bhindi masala also goes well in a school / office lunch box with some rotis. It's my kids' favourite and they don't mind eating this on a rotation. For a change sometimes I also add boiled potatoes. Add chopped onions, salt and fry until golden brown. Now add turmeric powder, red chilli powder, coriander powder and garam masala powder and give it a nice stir. (ensuring it doesn't get burnt).
