Add spices such as red chilli powder, turmeric powder, garam masala powder, black pepper corn powder and mix well. Add beaten yogurt, mix well and put it aside. - Boil water in a deep pot,add whole garam masalas tied in a muslim cloth.
- As the water boils add washed rice and salt and boil.
- Drain out the water and keep the rice aside.
- In the mean time marinate the mutton with salt, turmeric powder, biryani masala,red chilli Powder,curd,ginger garlic paste and oil.
- Heat oil and temper cumin seed bay leaf and red chilli.
- Add ginger garlic paste and saute well till raw smell disappears.
- Add onion chopped and saute well adding salt and turmeric powder.
- As the onion slices get brown add Potatoes and saute well.
- Add mutton and saute well adding red chilli Powder and cumin coriander powder.
- Cover it and keep stiring occasionally.
- When mutton and potatoes are soft keep aside.
- Heat ghee and add biryani masala and keep in a bowl.
- Now arrange the rice and mutton in a deep pot.
- Put a lauer of rice first then arrange mutton pieces and Potatoes sprinkle ghee with biryani masala,kesar soaked milk and kewra essence.
