  1. Prepare 8 of arbi leaves/colocasia leaves.
  2. You need 2 cup of besan (gram flour).
  3. It's 2 tbsp of ginger green chilli paste.
  4. You need 1 spoon of fennel seeds.
  5. Prepare 1 spoon of red chilli powder.
  6. It's 1/2 tsp of turmeric powder.
  7. Prepare 1/4 tsp of asafoetida.

Patra is a popular Gujarati farsan recipe which is an integral part of Gujarati culture. In this recipe a mixture of besan is applied to Patra leaves and rolls are prepared. Gujarati patra instructions

  1. First wash, dry and remove bid veins from the leaves.
  2. In a bowl add besan,and all the masalas,lemon, jaggery and water -prepare thick paste like batter..
  3. Take one leaf and spread batter evenly on it and put second leaf over it on opposite direction -spread batter over it..
  4. Now fold from the side angle and apply batter - then start rolling it into roll..
  5. Put it into greased perforated plate and steam it into steamer for 15 minutes.when it steamed -take it out and let it cool down..
  6. Cut them into 1 cm diameter slice and prepare tempering for it..
  7. For tempering heat oil-add sesame,hing,mustard, and curry leaves-when sesame and mustard starts spluttering put patra over it..
  8. Let it fry for 1 minutes till then it will get nice brown and crispy layer-then flip the side fry it from another sides too..
  9. When it gets crisp from both sides take it out and serve it with tea..
