The noodle choices are soba, which refers to yakisoba or chuka style noodles, but not to be mistaken with buckwheat soba noodles which are not used in this dish. The other choice is udon noodles which are thick, white wheat noodles. This Hiroshima style okonomiyaki is special to me because it reminds me of one of my trips to Japan. For this variation, we're using yakisoba noodles and adding in a sunny side up egg.

  1. Whisk the ● flour and water (if you have time, leave to rest because it will easily spread on the pan later)..

  7. Crack eggs on the electric griddle and break the yolks. Place the okonomiyaki on top of the eggs. You don't have to flip over, just slide onto the eggs. The okonomiyaki should be meat-side down..
  8. Flip over with the egg sides up and transfer to serving plates. Drizzle okonomiyaki sauce and serve..
  9. You can use any toppings you like such as dried bonito flakes, aonori, mayonnaise or chopped scallions..

It's best served hot off the stove and topped with Kewpie Mayonnaise, Okonomiyaki sauce and of course - aonori, katsuobushi, and shichimi pepper.
