- For dough:- To make dough first, add maida,salt, oil, and cumin,and ajwain in one bowl and then add water as required and knead the dough..
- For kachori masala:-in one pan add fennel seeds,cumin seeds,and coriander seeds and roasted it at medium flame then grind it.
- For kachori stuffing.
- Heat oil in pan, add dry kachori masala,add hing,chopped green chilli,add ginger paste,mix it well for a minute,add chopped onion,mix it well,add salt,cook till onion become transparent.
- Add red chilli powder,turmeric powder and mix it well,add besan,add mashed potato mix it and cook for a minute,add dry mango powder,sugar,garam masala,add coriander leaves and mix it well,turn off the gas and cool it at room temperature.
- Make balls from stuffing and place this balls on rotis and make kachoris and deep fry these kachoris.
- Served kachori with chopped onion,green chutney,and Tamarind chutney.
