  2. You need of oil.
  3. Prepare of boiled potatoes.
  4. Prepare of peas/matar(optional).
  5. You need of chopped tomato (depending on size).
  6. It's of green chilli depends on spiciness.
  7. It's of jeera/cumin seed.
  8. Prepare of mustard seed(optional).
  9. Prepare of Hing/asafoetida.
  10. You need of turmeric powder.
  11. You need of laung/Lavang/clove powder.
  12. You need of saunf/fennel powder.
  13. It's of red chilli powder.
  14. You need of coriander seeds powder.
  15. You need of garam masala (if homemade then 1/4 tsp).

Aloo ki sabzi (spiced potato curry) is another dhaba favorite. Most the these dhabas have their own way of making it but one this is for sure, they are all delicious and spicy! When I used to make this sabzi earlier at home, I would always boil the potatoes first, crush them slightly and then make the curry. Aloo Puri is a delicious Indian bread that is made by mixing boiled potatoes with flour and spices.

Aloo Puri Dhabha style step by step

  1. First in cooker/pan add oil, once oil is hot add hing, cumin seeds and mustard seed..
  2. Now add tomato & green chili and and fry them nicely till oil is separated..
  3. Now add all the mentioned masala powder and mix them nicely and roast for 2 minuts..
  4. Add half cup water and again fry them till oil is separated..
  5. Now break 3 potatoes into small pcs (don't cut with knife) just in random shape break them..
  6. 1 potato completely mash, now add this mashed potato in gravy and give nice mix. (This will help to increase thickness and taste as well).
  7. Now add potato pcs and matar and give nice mix. Just cover the vessel for 2-3 minutes so potato and matar observe the flavour of masala. (Keep stirring in between).
  8. Now add water as per your desire consistency and boiled it for 7-8 minutes. (Keep stirring in between).
  9. Garnish with coriander leaves. Dhabha style Aloo sabji is ready!!!.
  10. Puri - mix all puri ingredients apart from water, now add water slowly and make dough like chapati. Keep it aside for 15 minutes. (Suji will observe the water and dough will become little tight).
  11. For frying heat the oil. Now roll puri and fry them. These puris will give bhatura kide of flavour..
