Ingredients of Bhindi masala

  1. It's 350-400 grms of Bhindi.
  2. It's 1 of Green chilli.
  3. Prepare 2 tbsp of Mustard oil.
  4. You need 1/2 tsp of Jeera.
  5. Prepare 1/4 tsp of Turmeric powder.
  6. It's 1/4 tsp of Red chilli powder.
  7. It's 1/2 tsp of Amchur powdera(dry mango powder).
  8. It's 1/4 tsp of Sounf powder.
  9. You need 3/4 tsp of Salt.
  10. Prepare 1/4 tsp of Garam masala.

Bhindi masala instructions

  1. Wash bhindi thoroughly and let it dry completely on a paper towel or kitchen towel..
  2. Cut it length wise. Cutting length wise make it easy to check for worms and it is quick. (Make sure that it is completely dry before cutting, I usually wash it at night and spread on paper towel to cook it in morning).
  3. Cut green chilli in different shape so that kids do not eat by mistake..
  4. Now add in all dry powders except garam masala..
  5. Heat oil in a heavy bottom pan. Add in jeera once jeera start crackling, add green chilli..
  6. Now add bhindi in which you have added all the masala already..
  7. First 2-3 mins fry it without covering to make sure there is no moisture and all pieces should cover with oil and masala evenly..
  8. Now cover and cook for 15 mins.keep stirring in every 4-5 minutes..
  9. After 15 mins open the lid and check if it is cooked or give little more time to cook. Once cooked remove the lid add in garam masala..
  10. Transfer in serving bowl..
  11. Note- it is important to dry bhindi completely,otherwise it will leave starch and will be difficult to handle. Adding amchur powder in the beginning is important as it helps in controlling the starch. You can cut it in any shape of your choice, I cut length wise just because it is fast for me..
