- It's 1 teaspoon of turmeric powder.
- Prepare 1 tablespoon of biryani masala.
- You need 2-4 of bay leaves.
- It's 2 pods of green cardamoms.
- You need 2 of star anis.
- Prepare 2 sticks of cinnamon.
- Prepare 3-4 of cloves.
- Prepare 1 teaspoon of sahi jeera.
- Prepare 5-6 strands of kesar soaked in warm milk.
- It's 2-3 drops of mughlai attar.
- Prepare To taste of salt and sugar.
- It's As needed of oil and ghee.
Authentic and aromatic, this dish contains fresh ingredients and will make you want seconds! For a milder dish (as this one is quite hot), leave out the dried chilli flakes. This is a biryani (or biriyani) from Northern India made by marinating the chicken in yoghurt and brought to life with aromatic flavours and a sauce created from some amazing whole spices. Chicken biryani step by step
- Marinate the chicken pieces with ginger garlic paste,oil curd,red chilli powder and garam masala powder for at least one hour..
- Boil water in a pot,add the whole masala ( bay lesf cardamom, cinnamon,cloves and star anis.
- Now wash the rice and boil it in the same water with salt.
- As the rice starts boiling remove from heat and strain the excess water.
- Spread the rice on a flat plate to cool down..
- Heat oil in a pan add the remaining whole garam masala bay leaf and sahi jeera,allow them to crackle.
- Add onion slices,ginger garlic paste and saute with salt and turmeric powder.
- Add Potatoes and saute.cover it well.
- As the Potatoes get golden brown add the chicken pieces.
- Saute and cover adding salt and turmeric.
- When the chicken pieces get tender add tomato puree and red chilli Powder.
- Combine it well and add curd.
- Cover for a while so that the Potatoes and chicken become soft.
- Now remove it from the pan and keep aside.
- Add oil and fry the boiled eggs with salt and turmeric powder.
- Now heat a pot add ghee and mix the biryani mssala and keep aside it in a bowl.
- Spread one layer of cooked rice arrange some of the Potatoes and chicken.
- Cover it with another layer of rice and place the remaining Potatoes and chicken pieces.
- Cover it with a layer of rice.place the boiled and fried eggs over it.
- Now mix the attar in the kesar soaked milk and sprinkle all over the biryani.
- Set a lid over the pot and seal it with atta dough.
- Keep it on a low flame for 20 mmts.
- Dum chicken biryani is ready.serve it with salad and raita.
