Undhiyu is a Gujarati mixed vegetable dish that is a regional specialty of Surat, India. The name of this dish comes from the Gujarati word "undhu", which translates to upside down, since the dish is traditionally cooked upside down underground in earthen pots, termed "matlu", which are fired from above.

Gujarati Undhiyu step by step
- Heat a oil in big pen.Add a cumin seeds, mustard seeds and hing. When mustard seeds crackers add a Green peas pigeon peas, chick peas,raw bananas peace and flat beans. Stirring and covered cook till 3 minutes on medium flame. After 3 minutes open a panand add all masalas, coconut and jaggery imly chutney. seaued1 minute.Than add a 5 cup boiling water..
- Take a all muthias ingredients in the bowl and mixed well..Add some water for kneeding soft dough. Make a small ball in this dough..
- Add the all balls in boiling curry. Stirring occasionally until cooking10 minutes. close the gas. Gujarati Undhiyu ready. Garnished with tomato, seasam seeds & Coriander leaves..
