Golpapdi also known as Sukhdi or Gur Papdi is a traditional Gujarati sweet dish made from whole wheat flour and jaggery which makes it a super wholesome and healthy sweet. It is typically prepared during auspicious occasions in a Gujarati household. Gujarati gol papdi is one of the quickest sweet to prepare and also this wheat flour based sweet is easier to prepare than any of the other traditional Gujarati sweets.

  1. Take a thick bottom kadhai add ghee. Once it gets melted and slightly hot add wheat flour(high flame)..
  2. Mix with a spatula. It will be a thick lumpy paste. Roast it keep stirring till the atta gets some color and get the aroma of the flour(high flame)..
  3. Add gundar and stir it till gets fry and gets crispy.keep stirring. Adding gundar in Sukhdi gives a nice crunchy taste while eating.. Now in medium flame Immediately add grated jaggery and dry fruits to it and mix it..
  4. Keep stirring and mix well all the sides. Off the flame immediately..
  5. Grease the plate with ghee and keep ready. Now immediately pour into the prepared plate and even out the surface using back of the spatula or katori to spread same on all the sides..
  6. Let it cool down slightly. While it is still warm. Slice it into the desired shape and size..
  7. So here one of the famous gujarati sweet Sukhdi is ready to serve!! Happy Diwali..

The texture of golpapdi is not like kaju katli or a barfi, it is quite crumbly yet melt in your mouth texture. The texture is derived by addition of ghee. Process of making this delicacy is also very simple. You just need to be a little patient while roasting wheat flour with ghee. This is the only process that requires time.
