Ingredients of Ghevar with rabri
- Prepare of For Ghevar.
- It's 1 cup of All-purpose flour.
- Prepare 1/4 cup of Ghee.
- Prepare 1/4 Cup of Chilled milk.
- Prepare 2-3 cups of chilled water.
- It's 4-5 of ice cubes.
- It's 1 tablespoon of lemon juice.
- You need of For Sugar syrup (Chashni).
- It's 2 cups of Sugar.
- You need 1 cup of water.
- Prepare 1/2 tsp of Cardamom powder (optional).
- You need As needed of Kewra water (optional).
- You need of For Rabri.
- It's 1/2 litre of milk.
- You need 150 gm of khoya or mawa.
- It's 1/2 cup of sugar.
- It's 1 tsp of Cardamom powder.
- It's 1/4 tsp of Kesar(safforn) mix powder (optional).
- It's handful of Dried fruits to garnish.
- You need 2 tsp of Rose petals to garnish.
- You need 800 ml of Ghee/oil to fry.
I made this because the festivities have begun and the festival of Raksha Bandhan has all arrived. Rabdi Ghevar: Ghevar is a special Rajasthani dessert made around the time of Saawan and Rakshabandhan. It's a disc-shaped porous dessert that resembles a honeycomb. Ghevar is a traditional Indian dessert especially made during saawan month and around rakshabandhan.
Ghevar with rabri instructions
- Take a big mixing bowl... add ghee and ice cubes..
- Rub in the ice cubes until ghee thickenes.. remove the ice and keep whisking the mixture until fully creamed..
- Add in the maida and mix tocobtain a crumbly texture. Add in the chilled milk..
- Mix well then gradually add and mix chilled water little at a time.add in the lemon juice mix well.the batter should be very thin and flowing.Set in the fridge for 10 mins. to chill..
- Meanwhile heat up ghee (3/4th filled) in a round vessel or frying pan. Pour in a ladle full of batter in the center of hot ghee from some height. After 2 secs again oour in same amount same way. Repeat it 15_20 times for one ghevar. Browning at the bottom indicates ghevar is cooked..
- Take it out from ghee. Make all the ghevars. Keep aside.now boil water and sugar...make one string consistency sugar syrup. Stack the ghevars and pour chashni over them..
- Now lets make rabri... heat up the milk.. add khoya let it cook a bit.. add sugar, cardomom powder etc and let it simmer on low.. stirring in between until it thickens.let it cool a bit..
- Spread it on top of the ghevars. Garnish and serve. ENJOY!!!.
